Crispy Potato Terrine Topped With Chorizo & Chipotle Mayonnaise dish served

Prep time 15-20 min plus cooking and overnight pressing Cook time 15-20 min

  • Finely sliced potato
  • Unsalted butter
  • Chopped thyme
  • Sea salt
  • Crack black pepper
  • double cream
  • Shallots
  • Diced chorizo
  • Parmesan
  • Chipotle mayonnaise
  • Chives

1.Mix the finely sliced potato with melted butter , chopped thyme, salt , cracked black pepper and double cream then layer in greaseproof lined loaf tin.

2.Cover with foil and cook on a low heat(160c) until the potato is tender , remove and cool then press over night.

3.Once pressed remove from the tin and slice into even slices ready to shallow fry.

4.Add the diced shallots and chorizo to a frying pan and cook until crispy then cook the terrine.

5.Top the cooked terrine with crispy chorizo , grated parmesan and chipotle mayonnaise and then finish with finely chopped chives.
