Festive Turkey Burger served

  • Turkey escalopes – 4
  • Buttermilk – 350g
  • Plain white flour – 200g
  • Panko breadcrumbs – 150g
  • Salt – 5g
  • Smoked rindless streaky bacon – 120g
  • Canadian maple syrup- 40g
  • Gravy granules – 100g
  • Breaded brie wedges – 8
  • Brioche burger bun – 4 
  • Pigs in blankets – 100g

 Method

1. Remove the turkey from the packaging and allow to breath

2. Marinate in the buttermilk for up to 2 hours in the chiller

3. Mix the flour, panko and salt together and set to one side

4. Coat the turkey with the mix and deep fry until cooked

5. Place the bacon onto a tray and coat with maple syrup and freshly cracked black pepper and grill until cooked and caramelised

6. Make the gravy as per the instructions and keep hot

7. Fry the brie and keep warn

8. Toast the bun and keep warm

9. Cook the pigs in blankets and keep warm

10. Assemble the burger and tip with a pig in blanket and then drizzle with gravy
